Making Merry, in Two Parts

Christmas cookies and houses made out of said cookies always make me feel in the spirit.

Penny and I made a gingerbread house. I like to think of it as Extreme Makeover: Cookie Edition. We have our host, Ty Snowington. He exists just to make people smile ... look at how jolly he is:

Another gingerbread family's dream come true. And all that selfless work around the holidays to keep everyone fed too.

Erica and I made traditional cookies too. But the untraditional part was making honey comb brittle. Erica found the recipe in a magazine and, as we are both fan of Cadbury crunchie bars, this simply had to be tried. The first hurdle was having all the ingredients - and we did! Very simple actually: mostly honey with the secret ingredient being baking soda.

Step one, combine ingredients and bring to a boil(ish):


Step two, using a candy themometer (which we didn't have) bring candy to 300F. Yeah, that looks about right ... right?


Ok, yeah, that must be 300F.

And then pour into a pan ... and wait. Waiting for candy is torturous. But, ultimately, you have a lovely, crunchy pan of honey brittle. Mmm, mmm, mmm:
